Pizza Mac…is that a thing? Well, it is now. I figure if there can be a dish called chili mac, there can be a dish called pizza mac. 😉 My family loves pizza. We love homemade pizza and being gluten free, homemade is usually my best option. However, I’ll be the first to admit that homemade gluten free pizza from scratch can be time consuming to make. My kids have been wanting pizza. It has been sounding good to me as well. I came up with this idea to make a pizza flavored macaroni dish similar to goulash in hopes of fulfilling the pizza cravings. I wanted something easy to make for a weeknight dinner. It was a hit! We all loved it! It may not be authentic pizza, but the flavors are pretty darn close and it is so much easier and faster to make. This recipe is going into the “this is easy to make and the kids love it file”. I really don’t have a file. Are you kidding? I’m as disorganized with paper as they come. What’s a file? Just kidding. But really, the recipe is in my mental list of recipes to keep in rotation.

What Mom (the cook) loves: this is an economical, easy, one pot recipe (whoop-whoop) It tastes great and I can eat it. (I am the one with the food issues)
What Dad (the head dishwasher) loves: this tastes great! (Dad loves pizza!) Mom didn’t use a lot of dishes to make this.
What the kids love: pepperoni! this tastes like pizza and they love pasta
There you have it, it was a winner of a recipe for us. I hope you will try it and enjoy it as well. If dairy is not an option for you, you can leave it off or try a vegan cheese.

Please note: I use brown rice pasta, which may take a little longer to cook than regular wheat pasta or other types of gluten free pasta. Please adjust your cooking time, if needed.

- 1 lb extra lean ground beef
- 1 small onion, diced finely
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper
- 1 1/2 tsp oregano
- 3/4 tsp garlic powder
- 15 oz can tomato sauce
- 15 oz can diced tomatoes
- 2 & 1/2 cups water
- 8 oz dry macaroni, gluten free if needed
- 3 oz pepperoni, cut in fourths
- 1 small can sliced olives, drained
- 4 oz mozzarella cheese, grated-optional (or vegan cheese)
Over medium heat, add ground beef to a large skillet or dutch oven and begin browning. After a few minutes of browning, add the onion to the beef. Continue to cook and stir.
To the browned beef and onion, add in the salt, pepper, oregano, garlic powder, tomato sauce, diced tomatoes, and water. Continue to cook and stir, bringing to a simmer.
Add in the pasta. Cook for 10 minutes and stir as needed, so the pasta doesn't stick to the bottom of the skillet. Reduce the heat if needed, to keep at a low simmer. The pasta will absorb the liquid as it cooks.
After the 10 minutes, add in the sliced olives and pepperoni. Continue to cook, stirring as needed for about 5 more minutes, or until the pasta is cooked.
Remove the skillet from the heat and add grated cheese to the top of the pasta, if using. Serve and enjoy.
-The type of pasta used will determine the cooking time.
-Taste pasta to determine if it is al dente or done to liking and also if more salt/pepper is needed for taste preference.
-You can save some pepperoni to decorate the top of the pasta, if you'd like.
